Ingredients:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup coconut oil, melted
- 1/2 cup pure maple syrup
- 2 eggs
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup dairy-free coconut cream
- 2 tbsp honey
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
Instructions:
Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a baking sheet with parchment paper
Almond flour, coconut flour, shredded coconut, eggs, maple syrup, baking soda, vanilla extract, and salt should all be combined in a big mixing bowl
Stir to form a dough
Drop dough onto the prepared baking sheet in tablespoon-sized pieces, spacing them apart
Using a fork, flatten each portion into the shape of a cookie
Bake for ten to twelve minutes, or until the edges are browned
Take the cookies out of the oven and allow them to cool fully on a wire rack
Make the cream filling while the cookies are cooling
Put the coconut cream, honey, nutmeg, cinnamon, and cloves in a mixing bowl
Mix until creamy and well combined
After the cookies cool, sandwich two cookies together to form a cream pie by spreading a generous amount of the cream filling on the flat side of one cookie
Proceed in the same manner with the leftover cookies and cream filling
