Ingredients:
- 1 cup rolled oats
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, mix together the butter, brown sugar, and granulated sugar until creamy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the rolled oats, shredded coconut, and chocolate chips
Scoop spoonfuls of dough onto the prepared baking sheet, spacing them apart
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
