Ingredients:
- 4 boneless, skinless chicken breasts
- 1 packet French onion soup mix
- 1 cup beef broth
- 4 slices Swiss cheese
- 4 sandwich buns
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon butter
- 1 onion, thinly sliced
Instructions:
Warm the oven up to 190C 375F
Add salt, pepper, and half of the French onion soup mix to the chicken breasts
In a pan, heat the olive oil over medium-high heat
It will take about 4 to 5 minutes per side for the chicken breasts to get brown on both sides after you add them
Take the chicken out of the pan and set it aside
Over medium heat, melt the butter in the same pan
It will take about 10 minutes of cooking after adding the sliced onions until the onions turn caramelized
Add beef broth to the pan and scrape up any browned bits on the bottom
Put the chicken breasts back in the pan and cover each one with some of the onion mixture
Place the skillet in an oven that has already been heated and cover it
Put it in the oven and bake for 20 to 25 minutes, or until the chicken is fully cooked
Take the pan out of the oven and put a slice of Swiss cheese on top of every chicken breast
Put it back in the oven and bake for another three to five minutes, or until the cheese melts and starts to bubble
Toasted sandwich buns can be done in the oven or on a pan until they are just barely golden
Put a chicken breast with melted cheese on the bottom half of each bun to make a sandwich
Add onions that have been caramelized from the pan on top
Use the top half of the buns to close the sandwiches
Enjoy while hot
