These vegan barbecue meatballs taste great and are great for a barbecue where you dont eat meat. They are made with lentils, breadcrumbs, and a tasty mix of spices that will please both vegans and non-vegans.
Ingredients:
- 2 cups cooked lentils
- 1 cup breadcrumbs
- 1/2 cup finely chopped onion
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce
- 2 tablespoons barbecue sauce
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
Instructions:
Warm the oven up to 190C 375F
Use a fork or potato masher to mash the cooked lentils in a large bowl
Put in tomato paste, soy sauce, barbecue sauce, the flaxseed mixture, smoked paprika, cumin, salt, and pepper
Also add chopped onion and garlic
Mix everything together well
Make meatballs out of the mixture that are about an inch across, and then put them on a baking sheet that has been lined with foil
After the oven is hot, bake the meatballs for 25 to 30 minutes, or until they are firm and lightly browned
If you want, you can serve it hot with extra barbecue sauce to dip it in
