Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
- 1 cup cooked chicken, shredded
- 1/2 cup red bell pepper, diced
- 1/2 cup onion, diced
- 1/2 cup mushrooms, sliced
- 1/2 cup shredded cheddar cheese
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Cooking oil for frying
Instructions:
Put flour, eggs, milk, melted butter, and salt in a blender
Mix until its smooth
30-minute break for the batter
A little cooking oil should be heated in a skillet over medium-high heat
Cut up some onions, red bell peppers, and mushrooms and add them
For about 5 minutes, or until softened, saut
Take it out of the pan and set it aside
If you need to, add a little more oil to the same skillet and cook the shredded chicken until its hot all the way through
Add pepper and salt to taste
Place a small amount of the crepe batter in a hot, lightly greased non-stick skillet
Swirl the pan to cover the bottom evenly
Let it cook for one to two minutes, or until the edges begin to come off
After flipping the crepe, cook for an extra one to two minutes, or until its just barely golden
Do it again with the rest of the batter to make more crepes
Place some of the sauted vegetables, cooked chicken, shredded cheddar cheese, and chopped cilantro in the middle of each crepe
To make a triangle, fold the crepe in half, then in half again
Warm up and serve
