This Apple Cranberry Almond Coleslaw is delicious. It has crunchy cabbage, sweet apples, tart cranberries, and toasted almonds, all tossed in a dressing that is both creamy and sour. It goes well with any meal or can be eaten by itself as a cool salad.
Ingredients:
- 2 cups shredded green cabbage
- 1 cup shredded red cabbage
- 1 cup grated carrots
- 2 apples, thinly sliced
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/2 cup mayonnaise
- 2 tablespoons Greek yogurt
- 2 tablespoons apple cider vinegar
- 2 tablespoons honey
- Salt and pepper to taste
Instructions:
Shredded red and green cabbage, grated carrots, sliced apples, dried cranberries, and sliced almonds should all be put in a large bowl together
Whisk the Greek yogurt, apple cider vinegar, honey, salt, and pepper together in a different bowl until everything is well mixed
Add the salad to the dressing and mix everything together until its all covered
Put it in the fridge for at least 30 minutes before you serve it so the flavors can mix
If you want, you can add more sliced almonds and cranberries as a garnish
