Ingredients:
- 3 cups granulated sugar
- 1 cup water
- 3 envelopes unflavored gelatin about 2
- 5 tablespoons
- 1 teaspoon vanilla extract
- Food coloring various colors
- Powdered sugar for dusting
- Egg-shaped molds
Instructions:
Place the water and granulated sugar in a saucepan and heat over medium heat
Bring the mixture to a boil and stir until the sugar is dissolved
A candy thermometer can be used to confirm that the temperature reaches 240F 115C
Place the gelatin and 1/2 cup of water in a mixing bowl and let it sit while the sugar syrup heats
Give it roughly five minutes to bloom
After the sugar syrup reaches the right temperature, take it off the stove and gradually pour it into the gelatin that has bloomed, continuing to mix with an electric mixer on low speed
Once the mixture is thick, white, and fluffy, increase the mixer speed to high and beat it for ten to fifteen minutes
Once added, thoroughly combine by mixing in the vanilla extract
To make the desired colors for your Easter eggs, divide the marshmallow mixture into separate bowls and add food coloring to each
To keep the egg-shaped molds from sticking, generously dust them with powdered sugar
Using a spatula or your fingers, smooth the tops of each mold after adding the colored marshmallow mixture to them
Let the marshmallow eggs sit overnight or for at least six hours at room temperature
After they have hardened, carefully take the marshmallow Easter eggs out of the molds, remove any remaining powdered sugar, and allow them to dry for a few more hours
For fun designs or messages, decorate the eggs with icing or edible markers
