Slow Cooked Ginger Beer Pulled Pork on Brioche Buns

This sandwich has soft pulled pork that was slow-cooked in ginger beer and a sweet and sour barbecue sauce. It is served on soft brioche buns with crunchy coleslaw and creamy mayonnaise. The different tastes and textures work well together to make a satisfying meal.

Ingredients:

  • 5 kg pork shoulder, boneless
  • 2 cups ginger beer
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 8 brioche buns
  • 1/4 cup barbecue sauce
  • 1/4 cup mayonnaise
  • 1 cup coleslaw mix

Instructions:

Place pork shoulder in a slow cooker

In a bowl, mix ginger beer, sliced onion, minced garlic, soy sauce, brown sugar, ground ginger, paprika, and black pepper

Pour the mixture over the pork shoulder in the slow cooker

Cover and cook on low for 8-10 hours or until pork is tender and can be easily shredded with a fork

Once cooked, remove pork from the slow cooker and shred using two forks

Strain the liquid from the slow cooker and return the shredded pork to the slow cooker

Mix in barbecue sauce with the shredded pork

Toast the brioche buns lightly

Spread mayonnaise on the bottom half of each bun

Top with a generous portion of pulled pork

Add a handful of coleslaw mix on top of the pork

Cover with the top half of the bun

Serve warm and enjoy
