This Red Pepper and Sundried Tomato Hummus is a flavorful twist on traditional hummus, featuring the sweetness of roasted red peppers and the tanginess of sundried tomatoes. Its a delicious and healthy dip or spread for any occasion.
Ingredients:
- 1 can 15 oz chickpeas, drained and rinsed
- 2 roasted red peppers, peeled and seeded
- 1/4 cup sundried tomatoes packed in oil, drained
- 2 cloves garlic, minced
- 3 tablespoons tahini
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Fresh parsley leaves for garnish
Instructions:
Put roasted red peppers, sundried tomatoes, minced garlic, tahini, lemon juice, olive oil, and ground cumin in a food processor
Blend until smooth, stopping to scrape the sides as needed to make sure everything is well mixed
Taste and add salt and pepper, then blend again
Put the hummus in a bowl that can be served and put it in the fridge for at least 30 minutes so that the flavors can mix
If you want, you can add some extra olive oil and fresh parsley leaves to the top before serving
You can eat it with crackers, pita bread, or fresh vegetables
