A refreshing and nutritious salad featuring protein-packed quinoa, fiber-rich chickpeas, and a zesty lemon dill dressing. Perfect for a light lunch or a side dish for dinner.
Ingredients:
- 1 cup cooked quinoa
- 1 can chickpeas, rinsed and drained
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh dill, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
Cook the quinoa and add the chickpeas, cucumber, bell pepper, red onion, and fresh dill to a large bowl
Put olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl and mix them together with a whisk
Add the dressing to the salad and toss it around to cover it all
Put it in the fridge for at least 30 minutes before serving so the flavors can mix
