Pumpkin Hummus

This Pumpkin Hummus is a delightful twist on traditional hummus, perfect for Thanksgiving gatherings or any fall occasion. The creamy texture of chickpeas and pumpkin, combined with aromatic spices, creates a flavorful dip that will impress your guests. Its easy to make and pairs beautifully with your favorite dippers.

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup canned pumpkin puree
  • 2 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons water or more as needed

Instructions:

In a food processor, combine chickpeas, pumpkin puree, garlic, tahini, lemon juice, olive oil, cumin, coriander, smoked paprika, salt, and pepper

Blend until smooth, scraping down the sides as needed

Add water gradually until desired consistency is reached

Taste and adjust seasoning if necessary

Transfer to a serving bowl and drizzle with olive oil

Garnish with a sprinkle of smoked paprika

Serve with pita chips, crackers, or sliced vegetables
