Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup creamy peanut butter
- 1/2 cup caramel sauce
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 cup chopped peanuts
- 1/4 cup chocolate chips
Instructions:
Preheat the oven to 350F 175C
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy
Add the creamy peanut butter and vanilla extract to the butter-sugar mixture
Mix until well combined
Gradually add the all-purpose flour and salt to the mixture
Mix until a dough forms
Divide the dough into 24 equal portions and roll each portion into a ball
Place each dough ball into the cups of a mini muffin tin, pressing down to create a cup shape
Bake in the preheated oven for about 10-12 minutes or until the cookie cups are lightly golden around the edges
Remove the cookie cups from the oven and use a small spoon or your thumb to gently press down the center of each cup to create a well
Allow the cookie cups to cool in the muffin tin for a few minutes, then carefully remove them and place them on a wire rack to cool completely
Once the cookie cups are cooled, fill each well with a small spoonful of caramel sauce
Sprinkle chopped peanuts and chocolate chips over the caramel-filled cookie cups
Drizzle a little extra caramel sauce and melted chocolate over the tops for extra decadence
Allow the caramel and chocolate to set before serving
Serve and enjoy these delicious caramel peanut butter cookie cups
