Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup Pimms liqueur
- 1/4 cup buttermilk
- 1/2 tsp vanilla extract
- 1/2 cup finely chopped strawberries
- 1/4 cup finely chopped cucumber
- 1/4 cup finely chopped orange segments
- 1/4 cup finely chopped mint leaves
- 1/4 cup Pimms liqueur for brushing
- Whipped cream for topping
- Fresh strawberries, cucumber, and mint leaves for garnish
Instructions:
Preheat your oven to 350F 175C
Line a cupcake tin with paper liners
In a mixing bowl, sift together the flour, baking powder, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, until well combined
Stir in the 1/2 cup of Pimms liqueur, buttermilk, and vanilla extract
Slowly add the dry ingredients to the wet mixture, mixing until just combined
Fold in the finely chopped strawberries, cucumber, orange segments, and mint leaves
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
While the cupcakes are still warm, brush the tops with the remaining 1/4 cup of Pimms liqueur to infuse them with flavor
Allow the cupcakes to cool completely on a wire rack
Once cooled, pipe or spread whipped cream on top of each cupcake as frosting
Garnish with fresh strawberries, cucumber slices, and mint leaves
